Delicious Homemade Pancakes Two Ways

I'm excited to share with you my favorite pancake recipes! There are two delicious ways to make pancakes - using all-purpose flour with baking powder or my preferred method using self-rising flour. Both yield 4-5 fluffy, mouthwatering pancakes that will start your morning right.

Method 1: Merlyn's Self-Rising Flour Pancakes

  • 1 cup self-rising flour
  • 1 egg
  • 1 teaspoon salt (optional - can omit for those watching sodium)
  • No sugar needed (great option for those managing diabetes)
  • 1 cup milk
  • 2-4 tablespoons butter

Method 2: Traditional All-Purpose Flour Pancakes

  • 1 cup all-purpose flour
  • 3½ teaspoons baking powder
  • 1 egg
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1¼ cups milk
  • 3 tablespoons butter, melted

Directions:

Simply combine all ingredients in a large mixing bowl and stir until smooth. The batter should have a consistency similar to gravy.

Chef's Tip: For amazing cherry pancakes, use slightly less milk and add about half a jar of cherry juice plus 10-15 chopped cherries to the batter.

Vanilla Pancake Variation: My mom used to make incredible vanilla pancakes by adding 2 tablespoons of vanilla extract - they were the best pancakes I ever had!
